Classic Apple Strudel Recipe


Apple strudel consists of an oblong strudel pastry jacket with an apple filling inside, including raisins, sugar, cinnamon and bread crumbs.

Strudel is most often associated with the Austrian cuisine. Apple strudel is a traditional known as Viennese strudel, a popular pastry in Austria and in many countries in Europe that once belonged to the Austro-Hungarian empire.

Strudel is related to the Ottoman Empire’s pastry baklava, and came to Austria via Turkish to Hungarian and then Hungarian to Austrian cuisine.


Puff Pastry Sheets

3 Granny Smith Apples

1 cup of Bread Crumbs







Defrost the dough an hour before you start preparing your apple strudel.

Peel and cut apples into small slices. Granny smith apples are better due to their slight sour flavor.

Toast the bread crumbs in the pan with little bit of butter – 1 tablespoon.

Spread a little bit of all purpose flour on your working area and place the Puff Pastry sheets on it.

Use a roller to roll the dough a little bit to make a slightly bigger rectangle. Place half of the toasted bread crumbs into the dough sheet towards the right side. (see the pictures below)

Start placing half of the sliced apples, sprinkled with cinnamon, sugar, and raisins on the top of the bread crumbs. Now repeat the previous steps to create a second layer. Place the rest of the crumbs on the apples, followed by cinnamon, sugar and raisins.

Dip a basting brush into 2 spoons of melted butter, shake the brush above the layers to drizzle the the layers of apple, cinnamon, raisins and sugar.

To wrap the strudel, start by folding the right side first over the layers.  Then fold the top and bottom.  Finally, fold the left side of the puff pastry sheet. Try to put the last left side of the sheet all the way under the strudel to the right side. It prevents the dough from unrolling during baking.

Place the strudel carefully on the baking pan and brush the whole strudel with melted butter using the basting brush.

Bake according to instruction on your dough packaging. I bake mine 15 minutes in 400 F oven.

Let it cool, sprinkle with some powder sugar and ENJOY!
